It is another fantastic Foodie Friday at Designs By Gollum's
http://designsbygollum.blogspot.com/
I have had so much fun doing this the last few weeks....
This recipe was in the book Recipes By Momma Lynn
The recipe book I made at Shutterfly for Christmas a few years ago for both of my girls.
I added a few extras in the book like the two blankets in this picture that their Great Grandmothers made for them when they were born.
I wanted to put all of their favorites in the book, but as soon as they read the books they ask can we give you a few more for Vol. 2... LOL
This one is....
Mexican Tortilla Soup
2 - 3 Chicken Breasts cooked and shredded
15 oz. can stewed tomatoes / Mexican
1 can 10 oz. Enchilada Sauce (hot or mild)
1 med. onion chopped
4 oz. chopped green chilies
1 clove garlic minced
1 can Black Beans
2 c. water (add more as needed)
14 1/2 oz can chicken broth (or just use broth from chicken after you cook it)
1tsp. cumin
1 tsp. chili powder
1 tsp. salt
1/4 tsp. black pepper
1 bay leaf
1 pkg. frozen corn 10 oz.
cilantro dried cilantro
Corn tortillas (we like scoops)
Easy to make, just throw everything in a pot and let cook down for a few hours. Add extra water if needed.
I always at least double the recipe.
Great on a cold evening!!

This is sure a cold day, after 70 degree weather last weekend and now snow expected today. It is a soup day for sure...
But that is West Virginia for you, if you don't like the weather...WAIT A DAY!!! LOL
Have A Good One,
Lynn

A great soup. Looks wonderful!
Hey! I'm your next door neighbor in Virginia! We say the same thing -- sometimes we can get two seasons of weather in the same day!
Love making new soup recipes. Thanks for sharing.
well its official! I have tried this out and it is our absolute favorite!!!! I have had to share this with all my friends! And could it get any more healthy or cheap? I am making the beans from dried so its even cheaper! This is absolutely without a doubt the BEST soup EVER!! It is always made and on hand at my house now :) I just throw everything in the crock pot and talk about aroma therapy LOL Thank you so much for sharing this you have saved our diet and our budget! :)
Are you sure you mean to cook this for a 'few' hours? Since everything is already basically cooked, seems like the chicken would be tough.Sounds delish tho and intend to try it!
